Delhi feels closer to heart when it is pronounced as ‘Dilli’. The charm of this city lies with people who have been here for long. One of my childhood friends had the hardest time of her life when her family shifted abroad in US because she loved this city and thought this massive transfer would rip apart our friendship and it would fizzle out eventually with time.

That was a good six years ago. Nothing like that happened. We were always in touch and although we didn’t get to meet each other physically. Technology made it sure we were in touch. We pretty much knew what was going on in each other’s life but her news to come down to India was unexpected. No wonder, I was leaping with joy and I planned an itinerary just for us.

It turned out to be that she scheduled her plans with her relatives for the first week of her visit to Delhi. The rest she kept free for her friends, especially me! So I called her over to my place to stay for a couple of days. The feeling of uniting with old friends after years is bliss. Both of us were super excited and she was adamant on eating rich and spicy Indian food throughout her stay as according to her, she was weary of hot dogs and burgers. While I’m a total and complete non-vegetarian at heart, I must admit that every now and then, I indulge my herbivorous self with a big bowl of creamy daal makhani and naan. And guess what? Sometimes it’s actually just as good as butter chicken with naan! Yes, that’s right –I’ll swallow my non-vegetarianism for just a moment and accept this! So, a few weeks back, when I was out looking for some north indian cuisine in delhi so I could have my dose of daal makhani, I chanced upon the best I’d ever tried –and thought to myself, “Enough is enough, I’d better learn to make some by myself!”

So that’s how I dug out a recipe and went about attempting to cook myself some delectable daal makhani –and I must say, without a hint of modesty, it turned out so awesome that I’m certain I could win myself a job as top chef at the best restaurants in delhi!

Here goes the recipe:

  • First, soak ¾ cup urad daal and ¼ cup rajma in about 4 cup of water, overnight.
  • Rise and shine and get back a-cooking! Cook the lentils in the very same water with 1tbsp red chili powder, salt, and an inch of chopped ginger.
  • Next, in a thick pan, heat 1 tbsp oil and 3tbsp butter. Throw in 2tsp cumin seeds. Add 1 chopped onion to the mix and continue to fry until its golden brown.
  • You’ve now got to add another inch of chopped ginger, 8 cloves of chopped garlic and 2 chopped tomatoes to the pan. Sauté till the tomatoes are mashed properly. Now, throw in the cooked lentils in this mix –stir well and hard, continuously. Add some of the liquid the lentils were cooked in, and simmer for 15 minutes on low heat.
  • Now, to give it that awesome creamy edge like at the best restaurants in delhi –add ½ cup of fresh cream. Also add 1tsp garam masala powder, and let it continue to simmer for 5 minutes.
